Low yields from vines more than 50 years and classical system goblet. Manual harvest. Limestone and stony soils, located between 600 and 850 meters provide a better permeability and aeration obtaining wines with body and colour. Vineyards protected by the "Biosphere Reserve" by UNESCO in 2003.
Traditional, previously selected and de-stemmed grapes. Controlled temperature fermentation at 24º to 27 ºC for 12 daysin stainlesssteel tanks.
Aged in French and American oak barrels for 12 months. In bottle, minimum 12 months.
Bright cherry red colour. Fine and delicate flavour, notes of vanilla with touches of red fruits. Very soft in mouth, round and tasty, which clearly reflects the tastes of the ageing in barrel and memories of fruit. Very balanced.
The Mediterranean cuisine and the Iberian charcuteries. White and red meat, lamb and beef roasts, all kinds of pasta and rice dishes, stewed pulses, foiegras, cured cheeses.
